Análisis de la industria conservera en Santoña

Abstract

RESUMEN: La industria conservera ha sido y sigue siendo el motor de la economía de Santoña. Con el paso de los años, el sector ha ido desarrollando nuevas tecnologías y se ha ido haciendo más competitivo gracias al número de nuevas empresas que han ido surgiendo. La localización de la villa, junto a un puerto que a su vez ha ido evolucionando junto a las conserveras y se ha convertido en una pieza clave a nivel autonómico, y la larga tradición conservera han sido claves para el desarrollo de la actividad y para la asociación de las conservas de Santoña con calidad y tradición permitiendo así diferenciarlas en el mercado respecto al resto de productos procedentes de otros lugares geográficos. Desde las primeras industrias, pasando por los salazoneros italianos en el siglo XIX, hasta la actualidad, han sido muchas las mejoras que se han ido adquiriendo para crear un producto final con una calidad y un sabor reconocidos a nivel nacional y cada vez en mayor medida a nivel internacional. Mediante el análisis planteado se pretende mostrar la importancia económica de estas compañías y la comparativa entre ellas. Para la elección de las empresas se ha tenido en cuenta el tamaño de las mismas según la facturación de cada una y a través de una serie de variables se pone de manifiesto la diversidad del sector.

ABSTRACT: The canning industry has been and continues to be the engine of Santoña's economy. Over the years, the sector has developed new technologies and has become more competitive thanks to the number of new companies that have emerged. The location of the town, next to a port that in turn has evolved together with the canneries and has become a key piece at the regional level, and the long tradition of canning have been key to the development of the activity and to the association of Santoña preserves with quality and tradition thus allowing them to be differentiated in the market from other products from other geographical locations. From the first industries, through the Italian salting plants in the 19th century, to the present day, there have been many improvements that have been acquired to create a final product with a quality and flavor recognized nationally and increasingly. on an international level. Through the proposed analysis, it is intended to show the economic importance of these companies and the comparison between them. For the choice of companies, the size of the companies has been taken into account according to the turnover of each one and through a series of variables the diversity of the sector is revealed.
