abstract = {RESUMEN: Este Trabajo de Fin de Grado tiene como finalidad la creación de un Catálogo de iniciativas para eliminar, sustituir, minimizar y recuperar residuos generados en HORECA, concretamente y en un primer momento, se pretende implementar las actuaciones en el restaurante “La Caseta de Bombas”, situado en la ciudad de Santander (España). 
El objetivo principal de este proyecto es ofrecer un abanico de iniciativas en el campo de la gestión y la optimización de residuos, mediante acciones que contribuyan a alcanzar la sostenibilidad ambiental. 
Para conseguir el objetivo marcado, se ha llevado a cabo una investigación exhaustiva del desarrollo sostenible, la sostenibilidad ambiental, la economía circular y los residuos alimentarios. Además, se ha realizado un trabajo de campo en la empresa del Grupo Deluz y Compañía, recogiendo sus inquietudes y necesidades. 
Finalmente, se ha diseñado un Catálogo de iniciativas para ponerlo a disposición de las empresas, tomando como ejemplo práctico el establecimiento hostelero antes mencionado.},
abstract = {ABSTRACT: This final project aims to create a Catalogue of initiatives designed to eliminate, replace, minimize and recover waste generated in hospitality sector, specifically and where it is intended to implement the actions in the restaurant “La Caseta de Bombas”, located in the city of Santander (Spain). 
The main objective of this work is to offer a range of initiatives in the field of waste management and the optimization of them, through actions that contribute to achieving environmental sustainability. 
In order to achieve the objectives an exhaustive search of the literature which surrounds sustainable development, environmental sustainability, circular economy and food waste has been carried out. In addition, field work has been carried out at Deluz and Company group, where data was collected. 
Finally, a Catalogue of initiatives has been designed to make it available to other enterprises, taking the aforementioned hotel establishment as an empirical example.},
